  • Use kitchen scissors to cut the backbone out of the chicken.
  • Flip the chicken over and press it down.
  • Stretch the chicken out as much as possible.
  • Add salt, black pepper, lemon juice, and ginger garlic paste and spread it over the chicken.
  • Leave it for an hour or overnight.

  • Half of the marinade should be applied to the chicken after the remaining half has been thoroughly combined in a food processor.

  • Cover it and then marinate it in the refrigerator for at least 3 hours or overnight.

Step 3: Grill the chicken

  • Oil should be slowly added to the stove after heating it for 15 to 20 seconds on a medium-high flame.
  • As soon as the oil gets hot, grill the marinated chicken legs for 3 to 4 minutes on one side or until they are halfway done.
  • Roast for 60 minutes at 200°C (400°F) in the middle of a preheated oven or until the thickest portion of the thigh reaches 75°C.
  • More peri peri chicken sauce should be applied after the chicken has been gently flipped over and grilled until it is half-cooked.
  • We take the chicken legs out when they are half done.
